Greece-Italy-Tunisia and back!

First post here! On November 21st I’m setting out from my hometown in Athens, through southern Italy and Sicily to Tunisia on a 2008 KTM 690 Enduro. 3.200km riding and two long ferries in 17days. This is my first international and intercontinental (just) trip.
I’ll be heading down the boot from Brindisi and taking the northern coastal road of Sicily to Palermo and then ferry to Tunis. In Tunisia, I’m riding down the East coast over the course a 3 days through Sousse, Monastir, El jem and Sfax to Tataouine. The ‘final destination’ is Camp Mars in Jbil National Park, where I’m staying for two nights. Hopefully it will rain a bit by the time I get there and the dunes won’t be too soft. Which brings me to my first question: Does anyone know what the ideal tyre pressures are for desert riding? The distance to Camp Mars is approximately 200km, mostly dirt road and about 15km sand dunes. Back North mid-country through Gafsa and Kairouan to end with a few days in Tunis. Crossing back to Sicily to explore for 2-3 days. I’ll be visiting Syracuse and other main towns and Mt. Etna before heading to Brindisi to catch the ferry back to Greece. Any must see’s and do’s along that route?
I just bought this bike with 19.000km from a guy who kept it very well maintained and installed anti-vibe, fully-adjustable bar risers on it and it makes a big difference. I never needed any parts or ever had to do any road-side repairs before on trips around Greece on an R6 I had for a while, so please share your thoughts on what I might need for this trip and for this bike specifically. After not much research I’m taking a spare fuel pump and a rectifier just in case, hopefully they’ll stay in their box…
Also, does anyone have any knowledge of the fuel situation in more remote parts of Tunisia? I know the 690 has a map for low quality fuel and I’m also buying a fuel filter funnel that a friend uses in the marine industry that collects dirt and separates any water from the fuel.
I’ll try to ride on as much dunes and dirt as I can, so if you know of any trails in Italy or Tunisia let me know!
